The Baby Loaf - A cheat lunch you can both enjoy!

I have spoken before about how BLW terrifies me, although even with STILL not one tooth I will admit Lylie is getting much more confident eating on her own. Now the main task when it comes to feeding the baby is what to give her. Everywhere will tell you that variety is key to raising a child who is not a fussy eater so I am always on the look out for new baby friendly meal idea's. If you are in the same position you might want to try baking a baby loaf and saving yourself some valuable time while doing it!

The main selling point for this type of lunch is the ability to freeze slices for later. You will never see me as calm as I am with a freezer full of baby food ready to defrost to my hearts content. Need a last minute on the go lunch? Easy! Grab a slice out of the freezer, defrost over night ... you will trick everyone into thinking you have got your parenting shit together.

I have provided you with my two favorite recipes, but you could pretty much adjust these to suit your taste as long as you are using baby friendly ingredients such as full fat yogurt. Buy yourself a loaf tin lets get our bake on!

Recipe 1: Banana & Cinnamon Loaf

  • Heat oven to 180c
  • Combine a table spoon of vegetable oil, 2 medium eggs, 3/4 cup of brown sugar, and 1 cup of think natural full fat vanilla yogurt together in a bowl. Mix well.
  • Sift 2 cups of wholemeal flour, 2 heaped tea spoons of cinnamon and 1 teaspoon of baking powder into the mixture. Whisk together.
  • Gently add 1 grated pear, 2 mashed medium sized bananas and 1/2 a cup of plain oats and fold into the mixture.
  • Pour into a loaf tin which you have lined with baking paper and bake for 45 minutes - 1 hour. Check your loaf often.

Recipe 2: Strawberry & Coconut Loaf

  • Heat oven to 180c
  • Sift together 1/2 cup of coconut flour, 1 teaspoon of baking powder and 1/2 cup brown sugar into a bowl. Mix Well.
  • Add 1 cup of full fat natural yogurt, 2 medium eggs, 1 table spoon of vegetable oil and 1 teaspoon of vanilla paste. Combine.
  • Stir in 1 cup of diced strawberries and 1/2 cup of white chocolate chips.
  • Pour the mix into a loaf tin lined with baking paper.
  • Bake for 30 - 40 minutes. Check your loaf often.
I usually serve a few savory crisps and some yogurt with this type of lunch and it goes down a treat, I particularly enjoy it when it is warmed through! They taste so good you wouldn't believe they were baby friendly!
